Fish Tacos Recipe

2 Comments | Hubs really knows how to cook. I mean it. When I was young I remember having a conversation with my Mom and her best friend when I swore I was gonna marry me a man who could cook.
Since both of their husbands' (love ya, Dad) idea of cooking was grilling a piece of bologna on white bread with peanut butter, they had a good laugh at my expense.
Guess who's laughing now...
Ingredients:
Tacos:
- 1 filet white fish per adult - the Lovely Family prefers Mahi Mahi for this recipe
- olive oil
- salt and pepper
- smoked paprika
- juice from 1/2 a lemon
- shredded cabbage - for garnish
- diced tomato - for garnish
- chopped cilantro - for garnish
- shredded pepperjack cheese - for garnish
- flour or soft corn tortillas - Hubs prefers flour, I prefer soft corn
Sauce:
- 1/2 cup plain yogurt
- 1/2 cup low-fat mayo
- 1 avocado - diced
- hand full of cilantro
- fresh lime juice
- salt and pepper
Directions:
Preheat outdoor grill to high heat. Place fish filets on a large piece of aluminum foil and coat generously with olive oil. Sprinkle with salt, pepper and smoked paprika. Squeeze the juice of 1/2 a lemon. Once finished preparing the fish, place another piece of foil on top of fish and crimp edges to create an envelop, enclosing the filets inside. Grill on high for 12-15 minutes, or until fish is flakey.
Meanwhile, prepare garnish items and sauce. To prepare the sauce, place all items in blender and blend on high until smooth.
Serve fish and garnish items on either flour or soft corn tortillas.
